Blood Orange, Ginger and Almond Cookies
Ingredients
110g almond flour
25g coconut oil
30g maple syrup
A tiny bit of grated ginger
A tiny bit of grated blood orange peel
Pinch of salt
Method
Preheat the oven to 170C
Mix the coconut oil, maple syrup and grated ginger (wet ingredients)
Mix almond flour, blood orange peel and a pinch of salt.
Mix wet and dry ingredients.
Place the dough between two sheets of parchment paper and roll it about 3mm thick.
Remove the top sheet and using a cookie cutter - cut into little shapes of similar size so that they bake evenly.
Bake for 7-9 mins, until the edges begin turning golden brown.
Transfer the cookies to a rack to cool completely.
